Quick Guide: Wedding Cakes for 2023
Of all the decisions you will have to make regarding your wedding day, the cake may be one of the most enjoyable (and delicious!).
As the Summer wedding season is now over, we asked Cyril Vandy, Pastry Chef, what were the trends he saw in 2022 so far. He also told us what we should expect for next year.
Here are the 3 trends you may want to consider when choosing your wedding cake:
The Naked Cake is here to stay
Cyril previously told us, that the Naked Cake was his best seller for the 2022 summer. However, it is a tendency that is going to repeat in 2023. The bohemian and rustic-chic theme is still in vogue in our area, and so is the Naked Cake.
“Couples are looking for more natural styles”, said Cyril. He explained his clients asked for less decoration based on sugar flowers and more fresh flowers. Indeed, there is a high demand for low-key weddings, less glam, and more intimacy and personalization. Considering all these facts, the Naked Cake is the most sustainable option for a discreet wedding.

Pretty, healthy, and sustainable
It is just as important to consider the taste of your cake as its appearance. Along with the more natural look, couples request less sugar in their cakes. Being healthy and eating well is a trend that we hope to continue. It is actually a global movement as people are eating less red meat than before and asking for full vegetarian menus for their events.
Cyril told us that, vegan cakes are also coming strong for 2023. It is quite evident that our eating habits are undergoing a slow yet very significant transformation, which is both extremely positive and comforting for the next generation. In spite of this, sugar-free and vegan cakes are not tasteless. Yes, they will present a challenge for the pastry chefs. They will need to adapt their recipes or create brand-new ones but the key is to move forward and keep learning every day. “I’ve been seeing this coming for a long time now, therefore I have taken some lessons in vegan cuisine, improving my recipes and cakes to be ready to properly respond to the demand”, said Cyril.
Another key point to highlight is seasonality. In our modern (and overconnected) world, we can have any kind of fruit at any time of the year, but is it a reasonable choice? Cyril told me “I will always advise couples getting married in summer to opt for the local red fruits, as they are not frozen thus they taste amazing”.
The Pastry Chef will have fewer options during winter, but he will be able to surprise you with something inspired and specially crafted for the season.

Individual Cakes
This trend comes directly from the US. I am still not sure if it is going to stick here, as I have only seen it at a few weddings in Europe. However, I really like it and I find it quite original.
The small individual cakes are just right for those couples who are not traditional or conventional. This will be a reasonable compromise if you want to skip the cutting of the cake and running poses for all your guests. The concept is to have small cakes served directly on individual plates to the invitees. It could replace the dessert or, you could also serve a pre-dessert just before.
As we all know, cutting the cake takes time and not everyone gets the same part. Mini cakes, therefore, have the advantage of ensuring that every guest receives the same size cake and has the perfect presentation. Plus, these mini cakes are extremely cute 🙂
